Country Style Bruschette

Make them when you have guests and enjoy them with chilled lager or a glass of ouzo!

1. Place the olive oil, salt and oregano in a bowl. Rub lightly each baguette slice a couple of times with a cut clove of garlic. Brush them with the scented olive oil.
2. Bake these slices at 200ºC for 10-15 minutes until they are crisp on both sides.
3. Deseed the tomatoes and chop them finely in a bowl. Cut the cucumber in half lengthwise, deseed it, dice it in cubes and add it in. Then add the feta cheese, olives and vinegar.
4. Combine everything well, check if you need to add salt, and place a heaped spoonful on each baguette slice.

  • 1/2 baguette, sliced thinly, crossways
  • 2 tablespoons extra virgin olive oil
  • 1 clove of garlic
  • a pinch of dried oregano leaves
  • 2 ripe tomatoes
  • 1 small cucumber
  • 2 olives (stones removed) finely chopped
  • 1/2 teacup of grated feta cheese
  • 1 teaspoon balsamic vinegar
  • salt
