1. Put the 2 puff pastry sheets on your working surface. Careful cut out 6 circles of pastry from each sheet. Fold one prosciutto slice in the middle and place on top of each pastry circle. Place 1 thin slice of mozzarella and 1 basil leaf on top. Add some freshly ground pepper.
2. When they are all ready, wet the pastry edges lightly with the diluted egg and fold to make a crescent. Use a fork to press down the seam, so as to seal the filling in.
3. Array all 12 onto a baking tray lined with greaseproof paper. Whisk the egg yolk and the milk together and brush the pies all over. Bake at 200ºC, in a preheated oven, for 20-25 minutes, until they rise and turn golden.
